Once is a one-of-a-kind Peruvian Nikkei dining experience from one of Los Angeles’ most acclaimed chefs, Ricardo Zarate. Born in Lima, Zarate’s name is synonymous with indigenous South American flavors. Immaculately executed and fused with his inherent passion, drive and culinary ingenuity, Zarate’s cuisine has earned him widespread critical renown and industry accolades including Food & Wine’s “Best New Chef” and four James Beard nominations.
Once (on-seh), which means “eleven” in Spanish and symbolizes Zarate’s spot in his line of 13 siblings, is inspired by his earliest memories of food. Blending traditional Peruvian staples with a Japanese influence, Once arrives on the world-famous Strip to join the ranks of the best restaurants in Las Vegas.
Drawing distinct flavors from both Peru and Japan, along with comforting dishes of Chef Zarate’s childhood. Once’s menu features 11 à la carte shared plates, which will rotate weekly based upon seasonal ingredients. Keeping with the theme, Once will have 11 signature cocktails, as well as a Gin + Tonic “slushee” machine for a Vegas-style twist on a boozy classic.
Once invites guest to unwind in the simple yet rustic dining room. The interior design is a nod to Zarate’s native Peru, with floor-to-ceiling living plant walls complemented by dim Edison lighting throughout. The space is designed to celebrate family and friends, the patio features five large communal tables surrounded by lush greenery, evoking an outdoorsy, rural vibe.
